Cupcakes Viajeros

CUPCAKES MUERTE POR CHOCOLATE ( unas 12 cupcakes)
  • 60 g chocolate negro a trocitos
  • 1 1/2 dl agua
  • 90 g mantequilla a temperatura ambiente
  • 220 g azúcar
  • 2 huevos
  • 100 g harina

Last week, a university friend ordered me some cupcakes to celebrate her mom's birthday. Up to this moment, everything was great; the thing comes when I come to think that the cupcakes should travel from Mallorca to Barcelona!! At first I didn't give much importance, mi intention was to bake her some of my most known doble chocolate cupcakes with chocolate swiss meringue buttercream...

But two seconds after that thought... It can not be! I can not send a meringue (out of the fridge) for two days travelling!!! Even if it is freezing cold outside! And buttercream... well, I'm not a big fan of buttercream when the cupcakes are for grown-ups (even though I could eat buttercream with a spoon!!! - actually... I have done it :S)

So I started to study which other tipe of frosting would go good; but when I commented it to other baker-friends, they almost killed me! How did I even think of sending a cupcake with such a delicate top? Fondant would be the "most" elaborate thing they would think about!!!

So I started with the cupcakes... and! OMG! i couldn't believe it! Never before a cupcake came out from my oven this ugly!!! (In their defense, I must say that they were delicious!)  Lucky me that I always start baking with some extra time, so I could redo them just right after (with another papercase, just in case!), and decorate them afterwards with some fondant.

So here they are; my cupcake-travellers!

And here comes the recipie:

CUPCAKES CHOCOLATE DEATH ( about 12 cupcakes)
  • 60 g black chocolate in chunks
  • 1 1/2 dl water
  • 90 g butter
  • 220 g sugar
  • 2 eggs
  • 100 g flour
  • 1 teaspoon baking powder
  • 2 ccocoa powder (without sugar, I usually use Valor)
  • 40 g grounded almond
Heat the oven to 170 g.C. and place the paper cases.
In a bowl, pour the water and chocolate and heat it at bain marie. Keep stiring until the chocolate has melted.
Meanwhile, whisk the butter together with the sugar and eggs until you get a whitish and fluffy dough.
Sift the flour, baking powder, cocoa powder and grounded almond, and add it to the butter dough alternating with the melted chocolate.
Pour it in the paper cases, and they're ready to go in the oven for about 25 minutes.

Recipie adapted from the book "Cupcakes, kakor och cheesecakes" from "The bearded lady". I bought it this summer in Sweden, and it comes with many many many delicious recipies!!!

Many sweet kissses!
